MASAKAN TRADISIONAL MAKASSAR (FOOD OF TRADITIONAL MAKASSAR INDONESIAN)

COTO MAKASSAR

Bahan :
1/2 kg daging sapi
1/2 kg hati
1/2 kg usus
1/2 kg limpa
1/2 kg jantung
1/2 kg babat
10 sendok makan ketumbar
2 sendok makan jintan
2 sendok makan merica/lada
10 batang sereh
4 ruas jari laos
2 ons bawang putih
1 gelas 200 ml kacang tanah
garam secukupnya, gula merah sebagai penyedap

Pelengkap :

cuka, bawang goreng, daun bawang, daun seledri, jeruk nipis, sambal tauoco sesuai selera
 
Cara membuatnya :
1. Haluskan ketumbar, merica, laos, jintan, sereh, bawang putih.
2. Semua bahan di atas ditumis pakai minyak goreng.
3. Kacang tanah digoreng tanpa minyak lalu dihaluskan.
4. Daging, hati, usus, limpa, jantung, babat dimasak sampai matang lalu diiris kecil-kecil sesuai dengan selera, turunkan bumbu yang sudah ditumis.
5. dihidangkan diberi bawang goreng, daun bawang, daun seledri, cuka atau jeruk nipis diatasnya.

Sambal taoco :
10 sendok taoco
6 bawang merah
6 lombok besar
cabai secukupnya
dihaluskan semua bahan ditumis pakai minyak

 1 / 2 intestine singk
 1 / 2 spleen singk
 1 / 2 heart singk
 1 / 2 singk chop down
 10 coriander tablespoon
 2 dill tablespoon
 2 tablespoon merica / peppercorn
 10 bar sereh
 4 galingale phalange
 2 garlic ounce
 1 glass 200 ml peanut
 salt sufficiently, demerara
